We are using Debian GNU/Linux (http://www.debian.org).

Debian is very stable and can be installed with very little, you can add on
what you need. This is different from distributions like RedHat which will
install everything and then you must take off all those things that you do
not need. You can get Debian from the website I quote above.

This list is actually for a specific project for providing technical
resources to latin america, specifically in terms of computers and hardware.
This list is probably not the correct place for you to ask such questions.
You could try imc-tech instead, but it would be best to ask general linux
questions elsewhere I think, although you are likely to get an answer there.
